Santa Catalina is one of several individual farms in the Antigua Valley that is managed by Pedro Escheverria. One of the reasons we keep going back to Pedro and his farms is his dedication to the Bourbon varietal tree. Many of his farms are planted only with these trees, which are most closely related to the original varietal brought to Latin America. Although less resistant to disease, the variety still produces some of the sweetest, most delicate coffees in the region.

Finca Santa Catalina is one of Pedro's higher elevation farms, growing right on the upper edge of the valley around Volcán el Fuego. The high elevation lets the coffee cherries mature slowly and develop full flavors on the trees, while the volcanic soil and ash replenish the rich soil.
